Dining at Delmonico's in 1881

Where would the likes of Joseph Pulitzer and William Randolph Hearst have dined during the setting of our story (Around the World in 72 Days)? Why at Delmonico's of course! The haute cuisine establishment was located at 212 Fifth Avenue across from Madison Square (you'll find it on this interactive map from the same time period). Part of what makes historical fiction so appetizing to me are the delicious finds--like this menu from 1881 and its intriguing delights like "Young America sorbet" (which sounds like a patriotic palate cleanser). Thanks to The Vintage News for uncovering this dish!
